grass cover between every other row, vineyard monitoring contract covering sustainable pest-control methods and product traceability,organic fertilizers, vine protection (traceability file available),-excess bud removal on the Merlot vines, mechanical leafstripping,green harvesting on the Cabernet Sauvignon and Franc vines to limit differences in ripeness. This operation is conducted immediately after the grapes change colour, treatment against botrytis.
- Winemaking techniques :
individual plot monitoring and ripeness checks twice a week (including analysis of anthocyans), introduction of a winery monitoring booklet providing traceability of the wine back to the individual plots of vines,grapes harvested by machine, wine bled off from the Merlot and Cabernet varieties, temperature control (on all our vats).

酒庄介绍
在波尔多葡萄园的中心位置，有一个叫Soussac的小村庄位于巴特德洛奈斜坡地区最高的山坡，直到现在一直由Jolivet家族经营着这片葡萄园，这里的建筑是目前最经典的19世纪风格。
1981年，Jolivet夫妇继承了这27公顷的家族财产，多年来，他们坚持改进和扩展，同时坚持他们的基本原则：以最大的热心去酿造。从葡萄种植到酿酒全过程均采用传统的手工工艺。
他们非常重视自然环境的保护，1999年，他们在葡萄园边上建立了废水处理厂。
现在，Jolivet夫妇所酿制的波尔多红葡萄酒、白葡萄酒、桃红葡萄酒都体现了真正的波尔多风格。

Tasting notes :
“After its lovely crimson-ruby colour with raspberry tints, Chateau Haut Maginet Red reveals a nice powerful bouquet of red fruit scents with hints of flowers, spices and mildish mint. On the palate, it is fleshy, rounded and fruity with fine, mature tannins and a lovely fresh finish. It is at its best served at room temperature of about 17-18°C with paté, roasted red meat, grilled white meat, lamb stew and selections of hard cheeses. It is pleasant right now and will keep all its qualities for another 4 years or so.”
靓丽的宝石红，马其内城堡红葡萄酒充满浓郁的水果，薄荷及花香，口感柔顺，单宁成熟，侍酒温度17-18°C，烤红肉，烤白肉，炖羊肉和奶酪是不错的配餐选择。目前饮用已经很不错，充分发挥潜质可能需要继续储藏4年之久

酒庄介绍
佩加洛城堡 Chateau Puygueraud曾两度入选日本专业酒评之推荐酒单，且属名门里鹏 Le Pin 家族所有，但因产区在法兰西丘 Cotes de Francs，属比较不知名的AOC小产区，因此注目度不高。但她于酒质的各项表现，却是超乎水准，不论在当即享用或未来熟成，都能让人期待，因此才特别选为首次餐会之法国酒。
来自比利时的 Thienpont 家族同时拥有波尔多右岸名酒庄Vieux Château Certan 和超级车库酒庄 Le Pin 闻名于酒界。George Thienpont 在 1946 年买下 Château Puygueraud 时，园区还是一片荒地，他们先种植谷物和饲养牲畜，让地力慢慢复苏，花了30年漫长的等待，直到 70 年代后期才开始种植葡萄，终于在 1983 年酿出第一个年份。
酒庄目前出产三个品项：主力的 Château Puygueraud、副牌酒 Château Lauriol 与顶级款 Cuvée George，由 George 的儿子 Nicolas 管理。Château Puygueraud 的品种以 Merlot 为主，混合高比例的 Cabernet Sauvignon 与 Malbec。他们在 2005 年摘除了所有的 Cabernet Sauvignon，改种 Cabernet Franc 这个比较早熟，更适合 Côtes de Francs 风土条件的品种。
除了 Château Puygueraud，Nicolas 同时也是 Château Pavie Macquin（已升级为圣埃米隆一级B组）、Château Larcis Ducasse、Château Bellevue、Château Les Charmes Godard 与 Château La Prade 的主人,Thienpont 家族手上的珍宝令人称羡。
AOC Bordeaux-Côtes de Francs 位于 Saint-Emilion 东边的丘陵上，总面积 450 公顷，算是波尔多区最小的法定产区。虽然不若邻近的 Pomerol、Saint-Emilion 亮眼，区内也没有列级酒庄，却是寻宝的好地方。Château Puygueraud 如同一块尚未雕琢的璞玉，等待明眼的爱酒人士发掘。

关于Le Pin：
里鹏可以说是法国酒坛半个世纪以来最引人瞩目的成就。1979年，一位名为杰克.天安宝(Jacques Thienpont)的买家向罗贝夫人(Mme.Laubrie)购买一个小葡萄园，在老施丹庄园(Vieux Chateau Certan），这个买主姓氏马上就让人怀疑是否老施丹庄园打算扩充园地，因为这个杰克正是老施丹庄园主亚历山大的堂弟。这个当时以100万法朗所买到的小葡萄园，只有一公顷，小到不能称庄园的程度，所以只好名为“里鹏”(Le Pin)，没有冠以庄园的称号。
这个葡萄园不但是在老施丹庄园旁，离帕图斯庄园只有咫尺之差。这个新园主立志要向帕图斯庄园的方向迈进，一切都以柏翠庄园为标准。目前酒价甚至超过酒王之王帕图斯。
